‘Sparkling, please – always!’
Our teas are all made from a cuvee of teas which is made exactly the same way you make a cuvee of grapes when producing champagne. We only use high quality organic teas, from the delicate white teas to the more intense and full-bodied black teas. We mix different kinds of teas in each bottle to create our three unique flavours as have we tested hundreds of different teas and variations to ensure the highest quality and the most outstanding taste.
‘Crisp notes of jasmin and chamomile’
is our non-alcoholic tea and also the most complex to produce. It contains nine organic teas and three different fine white teas which gives it its signature softness and elegance. With its high complexity and long taste, it is an excellent choice as an aperitif but it can also accompany starters, light main courses and most desserts. The main ingredients are organic green, white, black and herbal teas blended with grape juice and just a dash of organic lemon juice.
‘Crisp notes of citrus and green tea’
has a strong green tea persona whilst bearing significant notes of citrus fruits which gives it its fresh and crisp impressions. It is a perfect companion for sushi and the Asian kitchen. The main ingredients are green, white, ginger and citrus teas, blended with white wine and just af dash of organic lemon juice.
‘Crisp notes of hibiscus and red berries’
Is our interpretation of an organic sparkling rosé. It has a delightful bitterness which balances its crisp tones of red berries. The Red Label is the perfect choice for light servings such as appetizers, seafood, fish and white/light meat dishes. The main ingredients are organic green, white, black and herbal teas blended with white wine and just af dash of organic lemon juice and finally the Hibiscus flower which really is the ‘secret fifth element’ if you will.

So, what is Sparkling Tea, you might ask?
Sparkling Tea is a somewhat new type of beverage targeted at those of you who refuse to indulge in mediocre, mass-produced low-quality beverages from conventional producers whom try to fill us with all sorts of chemicals and hollow promises of a better life. Not us. We only use the finest ingredients – organic obviously – when we produce our one-of-a-kind delicious teas. Our entire process is overseen by carefully selected staff who understand the importance of creating a truly unique product which, honestly, is a lovechild born from the desire to produce the World’s best low- and non-alcoholic beverage. We are tempted to promise that you can taste the amount of love and dedication we put into it but that’s ultimately for you to decide.
There are no easy ways nor any shortcuts when it comes to producing the World’s finest low- and non-alcoholic beverages. The process is very complex and nuanced which means that all of our brewers have to be thoroughly instructed in every process. Throughout the many stages of production clinic precision is key. If the leaves are left just minutes too long whilst soaking or if the temperatures are just slightly wrong, the entire brew is damaged. Needless to say, the entire process is made by hand, based on craftsmanship and a high-level of skills and expertise.
To ensure extraction of the perfect flavours from the teas, leaves are left soaking in first hot then cold water for an extensive period of time. Then comes the flavouring process which consists of adding white wine or grape juice and freshly squeezed lemon juice to balance the taste and to create the vinous expressions of the Sparkling Teas. Before being bottled all teas go through a secret refinement process only known to a few selected staff.
The People / The Story
The mastermind behind Copenhagen Sparkling Tea Company is Jacob Kochemba – an award-winning sommelier who can also call himself ‘the World’s best waiter’ – an impressive title he won in 2009. Jacob has spent all his life in the restaurant business helping famous venues such as Herman at Nimb to the coveted Michelin star. Jacobs many years of experience and his renowned taste and palette is absolutely the company’s invaluable point of difference as well as its seal of top quality.
To guide him through the dangerous waters of a new start-up and to ensure a sink-proof vessel for the future, Jacob has teamed up with Bo Sten Hansen – a business savvy senior with an impressive track-record from the likes of Deloitte and PFA Pension where he led a division of 80 staff. Bo also adds a burning desire to succeed and to make a mark internationally with the ground-breaking Sparkling Teas from the city of Copenhagen. As Bo puts it: “We want to build a company founded on Nordic innovation and Asian Tea traditions and serve it from a Champagne bottle”.
Why did the two decide on a new career working with tea?
The fascination was mutual and although the grand idea came from Jacob, it was the vast catalogue of choices, variations and nuances within tea that triggered Bo’s interest. The history of tea goes back thousands of years and has spread from the ancient far east around the world. Tea is a healthy beverage rich on vitamins and antioxidants but it doesn’t have to be a dull choice favoured by nutrition freaks – tea can be fun, too, and our Sparkling Tea will introduce a completely new product and a whole new collection of premium beverages. Tea also plays an important social role in life all over the world but whereas tea-time until now has been somewhat formal and conventional, we are now making it more fun and exciting. Whether you serve our non-alcoholic Blue or one of our alcoholic variations tea-time will certainly not be boring anymore.
